Ingredients
- 2 lb frozen diced hashbrowns (Thawed; drain excess water and pat dry if needed.)
- 1.5 cup sour cream
- 10 oz cream of mushroom soup (Or condensed cream of chicken soup.)
- 2 cup sharp cheddar cheese (Shredded and divided; 1 1/2 cups are mixed into the casserole and 1/2 cup is sprinkled on top.)
- 5 tbsp unsalted butter (Melted; for the casserole.)
- 1.5 tbsp dried minced onion
- 1.5 tsp kosher salt
- 0.5 tsp ground black pepper
- 0.333333 cup green onions (Finely diced and divided; use all but 1 tablespoon in the casserole and reserve 1 tablespoon for topping.)
- 4 tbsp unsalted butter (Melted; for the topping.)
- 1.25 cup Corn Flakes cereal (Crushed.)
Steps
- 1
Preheat the oven to 375°F (190°C) with the rack positioned in the top third of the oven. Spray a 13×9-inch baking pan with nonstick cooking spray.
- 2
In a large bowl, combine the thawed hashbrowns, sour cream, condensed soup, 1 1/2 cups of the shredded cheddar, 5 tablespoons melted butter, dried minced onion, kosher salt, ground black pepper, and all but 1 tablespoon of the diced green onions. Stir until evenly mixed.
- 3
Spread the potato mixture evenly into the prepared baking pan.
- 4
Sprinkle the remaining 1/2 cup of shredded cheddar evenly over the potato mixture.
- 5
In a separate bowl, stir together the 4 tablespoons melted butter and crushed Corn Flakes until the cereal is coated.
- 6
Crumble the buttered Corn Flakes evenly over the casserole.
- 7
Bake for 30–35 minutes, until the Corn Flakes are golden and the cheese is melted and bubbly.
- 8
Remove the casserole from the oven and top with the reserved 1 tablespoon of diced green onions. Serve hot.
Notes
For best results, thaw the hashbrowns naturally in a colander or use the microwave defrost setting for about 5 minutes, stirring halfway through; drain and press out excess moisture. The source recommends shredding cheese fresh for smoother melting and using a glass baking dish for more even baking.
