Ingredients
- 1 kg chicken (Cut into cubes; the author notes that chicken thighs work best, although breast is used in the video.)
- 0.25 cup water for the marinade
- 0.5 tsp salt
- 0.5 tsp baking soda
- 2 eggs
- 0.5 cup starch for the marinade (Approximately; the author uses a tilde (~).)
- 1 tbsp oil for the marinade
- 130 ml ketchup
- 0.5 cup water for the sauce
- 80 g sugar
- 1 tbsp rice vinegar
- 1 tbsp starch for the sauce
- 2 tbsp soy sauce
- oil for frying (Quantity not specified; needed for frying the chicken.)
- toasted sesame seeds (For serving; quantity not specified.)
- green onions (For serving; quantity not specified.)
Steps
- 1
Cut the chicken into cubes. The author notes that chicken thighs are better suited to this dish; breast is used in the video.
- 2
Add the water, salt, and baking soda to the chicken. Mix so that the pieces are evenly coated with the marinade.
- 3
Add the eggs and mix again.
- 4
Add approximately 0.5 cup of starch and mix, then pour in 1 tbsp of oil at the end.
- 5
Cover the chicken and leave it to marinate. It can be marinated overnight in the refrigerator for a more tender texture; in the video, it marinates while the sauce is prepared.
- 6
For the sauce, combine the ketchup, water, sugar, rice vinegar, and soy sauce.
- 7
Add the starch to the mixture and stir.
- 8
Pour the sauce into a heatproof vessel and cook until thickened. The author shows the finished thickened sauce.
- 9
Heat the frying oil. Fry the chicken in small batches, leaving space between the pieces; if all the chicken does not fit, fry it in several batches.
- 10
Fry the chicken for approximately 5 minutes, then transfer the pieces to a wire rack.
- 11
Fry the chicken a second time for approximately 5 minutes to create a crispier crust, then transfer it to the wire rack again.
- 12
Toss the fried chicken with the thickened sauce. Do not cook it further after mixing: toss and serve immediately.
- 13
Before serving, sprinkle the dish with toasted sesame seeds and green onions.
Notes
This is a simplified recipe. The exact amount of frying oil, as well as the sesame seeds and green onions, is not specified. The transcript mentions approximately 140 ml of ketchup, but the author's written description states 130 ml; the written quantity has been retained as the priority.
