Ingredients

  • 2 Weetbix
  • 0.25 cup Boiling water (for base)
  • 0.25 cup Skim milk
  • 1 sachet Sweetener
  • 120 g Fat-free plain smooth cottage cheese
  • 60 g Greek-style yoghurt
  • 1 tsp Cocoa powder (for mocha topping)
  • 45 ml Very hot water (For dissolving the coffee.)
  • 2 tsp Instant coffee (Heaped.)
  • 1 tsp Chia seeds (Optional; helps the mocha topping set.)
  • 2 tsp Cocoa powder (for ganache)
  • Boiling water (for ganache) (Just enough; add in small amounts until the ganache is smooth and pourable.)

Steps

  1. 1

Crush the two Weetbix into a serving container. Stir in the skim milk and the 1/4 cup boiling water until combined.

  2. 2

Microwave the mixture for 30 seconds.

  3. 3

Stir in the sweetener, then flatten the base with the back of a spoon. Set aside.

  4. 4

Mix together the cottage cheese, Greek-style yoghurt, cocoa powder, very hot water, instant coffee, and chia seeds to make the mocha topping. Add more sweetener if desired, and adjust the coffee strength to taste.

  5. 5

Spoon the mocha topping over the Weetbix base and smooth it out with a spoon.

  6. 6

In a small bowl, mix the ganache cocoa powder with boiling water a little at a time, until smooth and pourable.

  7. 7

Pour the ganache over the topping, then swirl it in with a knife.

  8. 8

Cover and refrigerate overnight, or for at least 3 hours, before serving.

Notes

The chia seeds are optional and help the mocha topping set. The creator notes that the sweetener amount and coffee strength can be adjusted. Refrigerate overnight or for at least 3 hours.
