Ingredients

  • 2 tbsp smooth peanut butter (Pip & Nut brand shown)
  • 1 tbsp chilli crisp (Lao Gan Ma brand shown)
  • 1 tbsp soy sauce (Kikkoman brand shown)
  • 1 tsp honey (Rowse brand shown)
  • sea salt (to taste; Maldon brand shown)
  • 2 chicken breast (diced and pan-fried until crispy)
  • 2 portion ramen noodles (Itsu brand wheat noodles shown)
  • 0.5 lime (for serving)

Steps

  1. 1

Prepare the sauce by combining smooth peanut butter, chilli crisp, soy sauce, and honey in a bowl. Whisk until smooth and well combined.

  2. 2

Dice the chicken breast into bite-sized pieces. Season with sea salt and pan-fry in a hot skillet with a little oil until the edges are golden and crispy.

  3. 3

Cook the ramen noodles in boiling water according to the package instructions (typically about 5 minutes).

  4. 4

Drain the noodles, reserving a small amount of the starchy cooking water.

  5. 5

Toss the cooked noodles and crispy chicken with the peanut sauce, adding a splash of the reserved noodle water if needed to loosen the sauce into a creamy consistency.

  6. 6

Serve immediately with a fresh squeeze of lime juice.
