Ingredients

  • 980 g White sugar
  • 700 g Unsalted butter
  • 770 g Heavy cream (33% milk fat)
  • 350 g White chocolate
  • 21 g Fleur de sel
  • 3.5 Vanilla beans

Steps

  1. 1

In a saucepan, cook the sugar on its own until you obtain a smooth, richly colored dry caramel.

  2. 2

Meanwhile, heat the heavy cream. Remove it from the heat before adding it to the caramel.

  3. 3

Off the heat, gradually pour the hot cream into the caramel, stirring carefully. Stir for about 1 minute.

  4. 4

Off the heat, add the butter, vanilla, and fleur de sel. Stir to incorporate.

  5. 5

Add the white chocolate while the caramel is still very hot. Stir until it has completely melted.

  6. 6

Blend with an immersion blender until the caramel is perfectly smooth and glossy.

  7. 7

Refrigerate the caramel, ideally overnight. If you are in a hurry, place it in the freezer.

Notes

The transcript does not specify the chilling time in the freezer. Estimated yield: approximately 2.8 kg; the number of servings depends on how it is used. The description indicates heating the cream at the same time, while the transcript specifies adding it off the heat.
