Ingredients

  • 2 cup Low-sodium beef broth
  • 3 cloves Garlic (minced)
  • 1 tbsp Coconut aminos (or soy sauce; for the broth)
  • 1 tbsp Sriracha
  • 1 tbsp Honey (or maple syrup)
  • 2 tsp Sesame oil (1 tsp for the broth and 1 tsp for the beef)
  • 1 tsp Fresh ginger (grated; or ½ tsp ground ginger)
  • 13.5 oz Full-fat coconut milk (Stir into the broth during the last 20 minutes)
  • 1 lb Ground beef (90% lean used)
  • 0.5 tsp Sea salt
  • 2 tbsp Coconut aminos (or soy sauce; for the beef)
  • 2 cup Cooked white rice (Microwaveable rice used; cook according to package directions)
  • 1 Cucumber (thinly sliced)
  • 3 Green onions (diced)
  • 1 Lime (cut into wedges; squeeze over bowls)
  • Sesame seeds (for topping)
  • Cilantro leaves (for topping)

Steps

  1. 1

Add the beef broth, minced garlic, 1 tablespoon coconut aminos, sriracha, honey, 1 teaspoon sesame oil, and ginger to the slow cooker. Whisk to combine.

  2. 2

Cover and cook on LOW for up to 12 hours. The source notes that longer cooking gives the broth more flavor.

  3. 3

About 20 minutes before serving, stir the coconut milk into the broth. Cover the slow cooker and turn it to HIGH for 20 minutes.

  4. 4

While the broth finishes, heat the remaining 1 teaspoon sesame oil in a large skillet over medium heat.

  5. 5

Add the ground beef to the skillet and break it into large pieces. Cook undisturbed for 3 minutes.

  6. 6

Sprinkle the beef with the sea salt. Add 2 tablespoons coconut aminos and break the beef into smaller pieces as you mix in the sauce.

  7. 7

Cook undisturbed for 2–3 more minutes, until the beef is crispy and caramelized. Remove the skillet from the heat.

  8. 8

Cook the rice according to the package directions.

  9. 9

Put ½ cup cooked rice and a serving of beef in each bowl. Ladle the hot broth over the top.

  10. 10

Finish each bowl with cucumber, green onions, sesame seeds, cilantro, and a squeeze of lime.

Notes

Yield is estimated at 4 bowls from the instruction to use ½ cup rice per bowl and the quantities listed. The source gives a maximum slow-cooker time of 12 hours, so actual total time varies. Quantities for sesame seeds and cilantro are unspecified. The source lists cooked rice but also instructs cooking it according to package directions.
