Ingredients

  • 2 tbsp Peanuts (For roasting and blending)
  • 1 tbsp Sesame seeds (For roasting)
  • 3 tbsp Coconut (Dried, fresh, or desiccated)
  • 2 tbsp Tamarind (Or use tamarind paste as needed)
  • 0.25 cup Hot water for soaking tamarind (More if required to soak the tamarind)
  • 250 g Small eggplants (Source gives 250 to 350 g, equivalent to 6 to 8 small brinjals; use young eggplants and keep stems intact)
  • 2 tbsp Oil (Source gives 3 to 4 tablespoons; some is retained after frying)
  • 0.5 tsp Cumin seeds
  • 0.25 tsp Mustard seeds
  • 0.75 cup Onions (Chopped; source gives ¾ to 1 cup)
  • 1 sprig Curry leaves
  • 0.5 tsp Salt (Divided; source gives ½ to ¾ teaspoon, including salt for the soaking water)
  • 1 tsp Ginger-garlic paste (Source ingredient gives 1 to 1½ teaspoons)
  • 0.5 tsp Garam masala (Source gives ½ to ¾ teaspoon; adjust to taste)
  • 0.5 tsp Coriander powder (Source gives ½ to ¾ teaspoon; adjust to taste)
  • 0.5 tsp Red chili powder (Source gives ½ to ¾ teaspoon; adjust to taste)
  • 0.125 tsp Turmeric (Haldi)
  • 2 tbsp Coriander leaves (Finely chopped, for finishing)
  • 2 cups Water for soaking eggplants (Source gives 2 to 3 cups)
  • 0.5 cup Water for curry (Add more if needed to reach the desired gravy consistency)

Steps

  1. 1

On medium heat, dry-roast the peanuts in a pan until they smell aromatic and turn light brown.

  2. 2

Reduce the heat and add the sesame seeds. When they begin to splutter, turn off the heat.

  3. 3

Add the coconut to the hot pan and sauté it until aromatic. If using fresh coconut, sauté it separately until aromatic.

  4. 4

Allow the roasted mixture to cool, then blend it with a little water to a coarse or smooth paste, as desired. Set the paste aside.

  5. 5

Pour 2 to 3 cups of water into a large bowl and add half the salt. Rinse the eggplants, slit each one from the base into four portions while keeping the stem intact, and place them in the salted water.

  6. 6

Heat the oil in a pan until medium-hot. Remove the eggplants one at a time from the water, wipe them dry with kitchen tissue or a cloth, and add them to the hot oil.

  7. 7

Stir and fry the eggplants until their skins are completely blistered and the brinjals are almost cooked but not fully cooked. Remove them from the oil and set aside.

  8. 8

Transfer the hot oil to a bowl, retaining 2 tablespoons of oil in the pan.

  9. 9

Add the cumin seeds and mustard seeds to the pan. When they begin to sizzle, add the onions and curry leaves, then sprinkle in the remaining salt.

  10. 10

Fry until the onions turn transparent. Add the ginger-garlic paste and fry until its raw smell disappears.

  11. 11

Pour half a cup of water into the pan.

  12. 12

Add the blended peanut mixture, red chili powder, garam masala, coriander powder, and turmeric. Stir and cook over medium heat.

  13. 13

Filter the tamarind juice or paste directly into the pan and stir.

  14. 14

When the gravy begins to bubble well, add the fried eggplants and stir. Add more water if needed to reach the desired gravy consistency.

  15. 15

Cover and cook until the eggplants are completely wilted and cooked through.

  16. 16

Add the chopped coriander leaves, stir, and serve with biryani, pulao, bagara rice, or roti.

Notes

The source recommends young, small eggplants for the best result and says salted water helps prevent bitterness. The structured ingredient list provides ranges for several ingredients; the primary quantity fields use the lower end of those ranges, with the full range preserved in notes.
