Ingredients

  • 330 g wheat flour (For the dough)
  • 30 g sugar (For the dough)
  • 3 g salt (For the dough; keep separate from the yeast initially)
  • 4.5 g instant yeast (Keep separate from the sugar and salt initially)
  • 1 egg (For the dough)
  • 45 g unsalted butter (For the dough)
  • 150 g milk (For the dough)
  • 8 g matcha powder (For the dough)
  • 50 g unsalted butter (For the matcha topping; the topping measurement is partially obscured in the sampled text)
  • 50 g sugar (For the matcha topping)
  • 1 egg (For the matcha topping)
  • 50 g wheat flour (Sift before adding to the topping)
  • 6 g matcha powder (For the topping)

Steps

  1. 1

Measure the dough ingredients. Keep the sugar, salt, and yeast separate at first rather than mixing them together, so the yeast can ferment properly.

  2. 2

Combine the dough ingredients and mix well until a cohesive dough forms. If using your hands instead of a mixer, knead or mix the dough for about 5 minutes.

  3. 3

Place the dough in a warm place and let it ferment until it doubles in size.

  4. 4

Check the dough: it is ready when an indentation made by poking it retains its shape.

  5. 5

Divide the dough into 8 equal portions.

  6. 6

Shape each portion into a smooth sphere and place the shaped buns on an oven tray.

  7. 7

Cover the buns with plastic wrap and let them rest for 15 minutes.

  8. 8

Remove the air bubbles from each portion and roll the dough out, then shape it again as shown in the video.

  9. 9

Arrange the shaped buns on the tray with space between them. Let them ferment for 50 minutes for the second rise.

  10. 10

Prepare the topping by combining the topping butter, sugar, and egg.

  11. 11

Sift in the flour and matcha powder, then mix well.

  12. 12

Transfer the topping mixture to a disposable piping bag.

  13. 13

After the second fermentation, pipe or spread the matcha topping over the tops of the buns.

  14. 14

Preheat the oven to 180°C (365°F).

  15. 15

Bake the buns at 180°C (365°F) for 18 minutes, until baked through and fragrant.

Notes

The sampled OCR does not clearly capture the first-rise duration or the exact topping-butter measurement; the topping butter is interpreted as 50 g from the visible text and should be checked against the original video. The finished buns are described as very soft and moist, with a beautiful green interior.
