Ingredients
- 2 tbsp Plant-based milk (The author recommends almond or coconut milk; at room temperature.)
- 2 Large eggs (At room temperature.)
- 1 Egg white (At room temperature.)
- 2 tbsp Chia seeds (Rich in omega-3s.)
- Oil (A little, for spraying or greasing the skillet.)
Steps
- 1
Add the plant-based milk, two large eggs, the egg white, and chia seeds to a blender.
- 2
Cover the blender and blend thoroughly until the mixture is smooth.
- 3
Heat a medium skillet over medium heat and spray or add a little oil.
- 4
Pour some of the mixture into the hot skillet. The number of tortillas will depend on the size of the skillet; using a medium skillet, the author made 2 tortillas.
- 5
Use a spoon to round out the mixture and spread it toward the edges. Stop spreading when the mixture can no longer cover more of the surface.
- 6
Cook for approximately 3 minutes, or until the top appears set.
- 7
Flip the tortilla and cook it for another 2 minutes.
- 8
Do not overcook it, to prevent it from browning. Remove it from the skillet and set it aside on a napkin. Repeat the process with the remaining mixture.
Notes
The recipe does not specify the exact amount of oil or the yield for other skillet sizes. The author states that a medium skillet produced 2 tortillas. Do not overcook them to prevent them from browning.
