Ingredients
- 5 tbsp white sesame seeds (The source uses pre-roasted seeds and recommends toasting them again; raw seeds require slightly more roasting time.)
- 3 tbsp mayonnaise (Kewpie mayonnaise was used; favorite or homemade mayonnaise may also work.)
- 4 tbsp sesame oil
- 1.5 tbsp soy sauce
- 1.5 tbsp rice vinegar
- 1 tbsp sugar
- 0.5 tsp dried shiitake mushroom (Finely grated directly into the dressing.)
- salt (Pinch)
Steps
- 1
Place the white sesame seeds in a dry frying pan over heat. Toast them until deeply golden and fragrant. If using raw sesame seeds rather than pre-roasted seeds, allow a little more roasting time.
- 2
Transfer the toasted sesame seeds to a mortar and pestle or grinder. Grind them to the desired texture: grind more finely for a creamier dressing, or leave them coarser for more texture.
- 3
Add the mayonnaise, sesame oil, soy sauce, rice vinegar, sugar, and salt to the ground sesame seeds. Mix well until combined.
- 4
Finely grate the dried shiitake mushroom directly into the dressing, then mix again until evenly incorporated.
Notes
Store leftovers in a clean, airtight jar in the refrigerator. The dressing is suggested for salads and many other dishes.
