Ingredients
- 1.5 cup rolled oats
- 2 ripe bananas (mashed)
- 1 cup canned brown lentils (rinsed and drained)
- 0.25 cup maple syrup
- 2 eggs
- 1 tsp baking powder
- 1 tsp cinnamon
- 0.33 cup dark chocolate chips

Preheat your oven to 180°C (350°F) and grease a muffin tin or mini loaf pan.

In a blender or food processor, combine the rinsed lentils, mashed bananas, eggs, and maple syrup. Blend until the mixture is relatively smooth.

In a large mixing bowl, stir together the rolled oats, baking powder, and cinnamon.

Pour the wet lentil and banana mixture into the dry ingredients and stir until well combined.

Fold in most of the dark chocolate chips, reserving a few for the top.

Spoon the batter into the prepared muffin or loaf tins, filling each about three-quarters full.

Top with the remaining chocolate chips and bake for 20-25 minutes, or until a skewer inserted into the center comes out clean.

Allow the loaves to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
The lentils are hidden in the batter to provide extra fiber, protein, and iron without affecting the flavor profile significantly. These can be frozen for easy lunchbox prep.
