Ingredients
- 1 lb zucchini (About 2 medium zucchini; coarsely grated)
- 0.5 tsp salt and pepper (1 teaspoon salt for salting the zucchini; ½ teaspoon each salt and pepper for the egg mixture)
- 2 tbsp extra-virgin olive oil (For coating the baking dish)
- 0.5 cup whole milk
- 4 large eggs
- 0.25 cup all-purpose flour
- 6 oz feta (Crumbled)
- 1 cup aged Cheddar (Grated; preferably aged)
- 4 scallions (Thinly sliced)
Steps
- 1
Place the coarsely grated zucchini in a colander. Sprinkle it with 1 teaspoon of salt and toss to coat. Leave it for 5 minutes so excess moisture can draw out.
- 2
Heat the oven to 350°F (175°C). Drizzle the olive oil into a 9-inch round or oval baking dish, then tilt the dish so the oil coats the base and sides.
- 3
Meanwhile, add the milk and eggs to a large bowl and whisk until combined.
- 4
Add the flour to the milk-and-egg mixture. Season with ½ teaspoon each of salt and pepper, then whisk just until no dry flour remains. A few small lumps are acceptable.
- 5
Squeeze the zucchini to remove as much water as possible; it does not need to be completely dry.
- 6
Add the squeezed zucchini, crumbled feta, half of the grated Cheddar, and half of the sliced scallions to the egg mixture. Fold until the ingredients are distributed evenly.
- 7
Pour the mixture into the prepared baking dish.
- 8
Top the mixture with the remaining grated Cheddar and sliced scallions.
- 9
Bake until the center is just set, 35 to 40 minutes. To test it, insert a toothpick into the center; it is ready when the toothpick comes out clean.
- 10
Remove the quiche from the oven and let it cool for 10 minutes.
- 11
Run a knife around the edge of the quiche to loosen it, then cut it into wedges or squares. Serve hot, at room temperature, or cold.
Notes
Grating the zucchini makes it easier to squeeze out excess liquid while retaining enough moisture for a light, silky custard. Serve the quiche alone or with a side salad.
