Ingredients

  • 1 tbsp olive oil
  • 0.25 cup onion (chopped)
  • 1 tsp garlic (minced)
  • 10 oz red enchilada sauce (1 can)
  • 30 oz pinto beans (2 15-oz cans, drained and rinsed; the source notes that black beans or half pinto beans and half black beans could also be used)
  • 2 cup tortilla chips (crushed and divided)
  • 2 cup cheddar cheese (shredded and divided)
  • diced tomatoes (1 can; can size not specified in the source)
  • 1 cup salsa
  • corn (1 can, drained; can size not specified in the source)
  • fresh cilantro (optional topping)
  • jalapeños (optional topping)
  • shredded iceberg lettuce (optional topping)
  • fresh pico de gallo (optional topping; drained Rotel tomatoes are also suggested)
  • avocado (optional topping; sliced or diced)
  • sour cream (optional topping)

Steps

  1. 1

Preheat the oven to 400°F. Lightly coat an 8×8-inch casserole dish with nonstick cooking spray and set it aside.

  2. 2

Place a medium skillet over medium-high heat and add the olive oil. When the oil is hot, add the chopped onion and cook for 2 minutes, until softened.

  3. 3

Add the minced garlic and continue cooking for an additional 30 seconds.

  4. 4

Stir the red enchilada sauce and drained, rinsed pinto beans into the skillet mixture.

  5. 5

In the prepared casserole dish, layer 1 cup of the crushed tortilla chips, half of the bean mixture, and half of the shredded cheddar cheese.

  6. 6

Repeat the layers with the remaining tortilla chips, bean mixture, and shredded cheddar cheese.

  7. 7

Bake for 20 minutes, until golden brown and bubbly.

  8. 8

Serve warm. Add any desired toppings, such as fresh cilantro, jalapeños, shredded iceberg lettuce, fresh pico de gallo or drained Rotel tomatoes, sliced or diced avocado, and sour cream.

Notes

The source lists diced tomatoes, salsa, and drained canned corn as ingredients, but the visible instructions do not specify when to add them. It also suggests trying 2 tablespoons of taco seasoning next time; taco seasoning is presented as a suggestion rather than part of the listed recipe. Can sizes for the diced tomatoes and corn are not visible or specified.
