A collection of five creative instant-noodle dishes inspired by comfort foods from around the world: creamy vodka sauce, Bhutanese ema datshi, Indo-Chinese manchow soup, caramelized onion soup, and smoky Maharashtrian thecha with eggs. Ingredients

  • 5 packets instant Maggi noodles (One packet per recipe; seasoning packets may be used according to preference.)
  • 2 tbsp vodka (For the Vodka Sauce Maggi; optional and can be omitted.)
  • 0.25 cup heavy cream (For the Vodka Sauce Maggi.)
  • 0.5 cup tomato purée (For the Vodka Sauce Maggi.)
  • 2 cloves garlic (Minced; for the Vodka Sauce Maggi.)
  • 2 tbsp parmesan cheese (Finely grated; for the Vodka Sauce Maggi.)
  • 8 green chilies (Sliced; for the Ema Datshi Maggi. Use fewer for a milder stew.)
  • 1 tbsp butter (For the Ema Datshi Maggi.)
  • 100 g cheese (Mild melting cheese, such as cheddar or mozzarella; for the Ema Datshi Maggi.)
  • 100 g chicken mince (For the Manchow Soupy Maggi dumplings.)
  • 2 cups chicken stock (For the Manchow Soupy Maggi.)
  • 1 tsp ginger (Grated; for the Manchow Soupy Maggi.)
  • 2 cloves garlic (Minced; for the Manchow Soupy Maggi.)
  • 1 tbsp soy sauce (For the Manchow Soupy Maggi.)
  • 2 yellow onions (Thinly sliced; for the Caramelized Onion Maggi.)
  • 2 tbsp butter (For caramelizing the onions.)
  • 1.5 cups vegetable stock (For the Caramelized Onion Maggi.)
  • 4 green chilies (For the thecha; char or roast for a smoky flavor.)
  • 4 cloves garlic (For the thecha.)
  • 2 tbsp peanuts (For the thecha; traditionally pounded with the chilies and garlic.)
  • 2 eggs (For the Thecha Egg Maggi; cook until the whites are set and yolks remain jammy if desired.)
  • 30 g cheese (Grated; for the Thecha Egg Maggi.)
  • 2 tbsp cooking oil (Used across the recipes as needed; amount is an estimate.)
  • salt (To taste; instant-noodle seasoning, soy sauce, stock, and cheese are already salty.)

Steps

  1. 1

Prepare the Vodka Sauce Maggi. Sauté minced garlic in a little oil over medium heat until fragrant. Add tomato purée and cook for several minutes until slightly thickened.

  2. 2

Add the vodka to the tomato sauce and simmer briefly to cook off its harsh alcohol aroma. Stir in the cream and grated parmesan until smooth and silky.

  3. 3

Add the Maggi noodles and enough water to loosen the sauce. Cook until the noodles are tender and coated in the creamy pink sauce. Serve hot.

  4. 4

Prepare the Ema Datshi Maggi. Melt butter in a saucepan, add sliced green chilies and water or broth, and simmer until the chilies soften and flavor the liquid.

  5. 5

Add the Maggi noodles and cook until nearly tender. Stir in the melting cheese and continue cooking until it becomes a thick, buttery, spicy cheese broth.

  6. 6

Prepare the Manchow Soupy Maggi. Combine the chicken mince with a little minced ginger, garlic, and salt. Form small loose dumplings with wet hands; they do not need to be perfectly pleated.

  7. 7

Bring the chicken stock to a gentle boil. Add the chicken dumplings and simmer until cooked through, about 5–7 minutes; the centers should no longer be pink.

  8. 8

Add soy sauce and the Maggi noodles to the soup. Cook until the noodles are tender, then taste and adjust seasoning. Serve as a soupy noodle bowl.

  9. 9

Prepare the Caramelized Onion Maggi. Melt butter in a wide skillet over medium-low heat. Add the thinly sliced onions and cook slowly, stirring frequently, until deeply golden, soft, and jammy; allow about 25–35 minutes.

  10. 10

Add vegetable stock and scrape up any browned onion bits from the skillet. Bring the broth to a simmer, then add the Maggi noodles and cook until tender and infused with the sweet onion flavor.

  11. 11

Prepare the thecha. Char the green chilies and garlic in a dry skillet or over a flame until blistered and smoky. Pound or crush them with the peanuts and a pinch of salt into a coarse, rustic paste.

  12. 12

Cook the Maggi noodles in water until just tender, then drain most of the excess liquid. Stir in the thecha paste and a little oil, coating the noodles thoroughly.

  13. 13

Cook the eggs separately in a lightly oiled pan until the whites are set and the yolks are still jammy, or cook them to your preferred doneness.

  14. 14

Top the thecha-coated Maggi with the eggs and grated cheese. Allow the residual heat to soften the cheese, then serve immediately.

Notes

The source describes five recipe concepts but does not provide exact quantities or complete spoken instructions. Amounts, cooking times, and techniques are reconstructed estimates. Use caution with salt because Maggi seasoning, cheese, stock, and soy sauce can contribute substantial sodium. For the chicken dumplings, cook to an internal temperature of 165°F / 74°C.
