Chocolate Chickpea Truffles
Fudgy, chocolate-rich truffles made with chickpeas, Medjool dates, nut butter, and cocoa, then coated in dark chocolate and cacao nibs for a satisfying crunch. They are naturally sweetened with dates and contain no refined sugar in the truffle mixture.

Ingredients
- 1 can Chickpeas (Drained; approximately 240 g drained weight)
- 20 g Pure unsweetened cocoa powder
- 60 g Smooth peanut or almond butter (Use peanut butter or almond butter)
- 6 Medjool dates (Pitted)
- 1 tsp Vanilla extract
- Fine sea salt (A pinch for the truffle mixture, plus more for sprinkling after dipping)
- 150 g Dark chocolate (At least 70% cacao; for dipping)
- 30 g Cacao nibs (Mixed into the melted chocolate)

Line a tray with parchment paper. Drain the chickpeas thoroughly and ensure the Medjool dates are pitted.

Add the drained chickpeas, cocoa powder, smooth peanut or almond butter, pitted dates, vanilla extract, and a pinch of fine sea salt to a food processor.

Process until the mixture is completely smooth and fudgy. Stop to scrape down the sides as needed so there are no large pieces of chickpea or date remaining.

Scoop out small portions of the mixture and roll them between your palms into small, smooth balls. Arrange the truffles on the parchment-lined tray.

Melt the dark chocolate gently in a heatproof bowl over a pan of barely simmering water or in short microwave intervals, stirring frequently, until smooth and fluid. Avoid overheating the chocolate.

Stir the cacao nibs into the melted dark chocolate until evenly distributed.

Dip each truffle into the melted chocolate, turning it to coat completely. Return each coated truffle to the parchment-lined tray.

Sprinkle the dipped truffles with a little fine sea salt while the chocolate is still wet.

Refrigerate the truffles until the chocolate coating is set, about 1 hour. Serve chilled or allow them to sit briefly at room temperature for a softer texture.
