Ingredients

  • 1.5 cup baby spinach
  • 1 cup ice
  • 1 orange (Peeled and quartered)
  • 1 Asian pear (Very ripe; peeled, quartered, and cored)
  • 4 oz silken tofu (Do not substitute soft or firm tofu)
  • 1 tsp matcha powder (Use 1–2 teaspoons)
  • 0.25 cup water (Plus extra as needed to adjust consistency)
  • 0.5 cup blueberries (Fresh or thawed frozen; for the glasses)

Steps

  1. 1

Add the baby spinach, ice, orange, Asian pear, silken tofu, matcha powder, and water to a blender in that order.

  2. 2

Process on low speed until the mixture is combined but still coarse in texture, about 10 seconds. Scrape down the sides of the blender jar as needed.

  3. 3

Gradually increase the blender speed to high and process until the smoothie is completely smooth, about 90 seconds.

  4. 4

Adjust the smoothie’s consistency with extra water as needed.

  5. 5

Divide the blueberries between 2 glasses.

  6. 6

Top the blueberries with the smoothie and serve.

Notes

If storing, keep the smoothie mixture and blueberries separate; combine them when ready to serve. Serve with a wide straw for a faux-boba drinking experience.
