Ingredients

  • 200 g Tuc crackers (For the base)
  • 100 g Butter (Melted, for the base)
  • 300 g Cream cheese (Such as Saint-Morêt)
  • 300 g Plain Greek yogurt
  • Fresh chives (A little)
  • Cured ham
  • Lemon juice (The juice of one lemon)
  • 4 feuilles Gelatin
  • Pepper (A little, for the cheesecake filling)
  • Cucumber (For the vegetable tartare)
  • Tomato (For the vegetable tartare)
  • Red onion (Finely chopped, for the vegetable tartare)
  • Fresh parsley (A little, for the vegetable tartare)
  • Salt (A little, for the vegetable tartare)
  • Pepper (A little, for the vegetable tartare)
  • Olive oil (A little, for the vegetable tartare)
  • Water (Cold water to rehydrate the gelatin, then a small amount of hot water to melt it)
  • Radish or bell pepper (Optional; the creator suggests adding other vegetables, such as radish or bell pepper)

Steps

  1. 1

Blend the Tuc crackers until finely crumbled, then add the melted butter and mix.

  2. 2

Place the mixture in a pan, spread it evenly, and press it down to form the base. Refrigerate for 30 minutes.

  3. 3

Meanwhile, soak the gelatin sheets in cold water.

  4. 4

In a mixing bowl, combine the cream cheese and plain Greek yogurt.

  5. 5

Add the fresh chives, lemon juice, and pepper, then mix again.

  6. 6

Melt the rehydrated gelatin in a small amount of hot water, then stir it into the cheese mixture.

  7. 7

Add the cured ham and mix to distribute it throughout the filling.

  8. 8

Pour the filling over the cracker base. Refrigerate for a few hours, until the cheesecake has set.

  9. 9

While the cheesecake sets in the refrigerator, finely chop the red onion and cut the tomatoes and cucumber into a fine dice. You can also add other vegetables, such as radish or bell pepper.

  10. 10

Place the vegetables in a mixing bowl. Add the fresh parsley, salt, pepper, and a little olive oil, then mix.

  11. 11

Spread the vegetable tartare over the cheesecake, remove it from the pan, and serve chilled.

Notes

The amounts of chives, cured ham, lemon juice, pepper, and tartare vegetables are not specified. The transcript also mentions the optional addition of radish or bell pepper. Stated setting time: a few hours in the refrigerator.
