Ingredients

  • 150 g Pitted dates
  • 80 g Raw almonds
  • 30 g Rolled oats
  • 1 tbsp Pure cocoa powder
  • 1 tbsp Peanut butter
  • Salt (1 pinch)
  • Grated coconut (For coating)
  • 1 Pitted date (Optional; add only if the dough is dry and does not bind when pressed)

Steps

  1. 1

Put the almonds in the Thermomix or other food processor mixing bowl. Blend for 8 seconds at speed 6, until the almonds are broken into small pieces.

  2. 2

Add the dates, rolled oats, cocoa powder, peanut butter, and salt to the mixing bowl.

  3. 3

Blend for 20 seconds at speed 6, until the mixture becomes a sticky, homogeneous dough.

  4. 4

Press a little of the dough to check that it binds together. If it is dry and does not hold, add 1 additional pitted date and blend again for 10 seconds at speed 6.

  5. 5

Form the mixture into small balls using slightly damp hands.

  6. 6

Coat each ball in grated coconut.

  7. 7

Refrigerate the energy balls for 30 minutes so they firm up before serving.

Notes

The stated preparation, cooking, and total times are 4, 11, and 15 minutes; refrigeration adds 30 minutes before serving. Store for up to 1 week in a closed container in the refrigerator. The coconut can be replaced with cocoa powder or sesame.
