Ingredients

  • 1.25 lb boneless skinless chicken breasts
  • 1.5 tbsp taco seasoning
  • 1 tbsp olive oil
  • 1 tbsp fresh lime juice
  • 0.5 tsp kosher salt (Or to taste)
  • 0.5 cup ranch dressing
  • 0.25 cup sour cream
  • 1 tbsp fresh lime juice
  • 2 tbsp fresh cilantro (Chopped; for the creamy ranch)
  • 4 large burrito-size flour tortillas
  • 1 cup Monterey Jack cheese (Shredded)
  • 1 large ripe avocado (Sliced or diced)
  • 2 tbsp fresh cilantro (Chopped; for filling)
  • 1 tsp olive oil (For toasting)

Steps

  1. 1

If the chicken breasts are thick, slice them in half horizontally. Toss the chicken with the taco seasoning, 1 tablespoon olive oil, 1 tablespoon lime juice, and kosher salt until every piece is evenly coated.

  2. 2

Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 4–5 minutes per side, until browned and the thickest part reaches 165°F (74°C). Transfer the chicken to a plate and let it rest for 5 minutes so the juices settle.

  3. 3

    Slice the rested chicken thinly.

  4. 4

In a bowl, stir together the ranch dressing, sour cream, the remaining 1 tablespoon lime juice, and 2 tablespoons chopped cilantro until the mixture is smooth and thick.

  5. 5

Warm the tortillas until pliable. Place the shredded Monterey Jack cheese, sliced chicken, avocado, creamy ranch mixture, and the remaining chopped cilantro down the center of each tortilla.

  6. 6

Fold the sides of each tortilla inward, then roll tightly from the bottom to form sealed burritos.

  7. 7

Lightly brush or coat a skillet with 1 teaspoon olive oil. Place the burritos seam side down over medium heat.

  8. 8

Toast the burritos for 2–3 minutes per side, turning as needed, until the tortillas are golden and crisp. Serve warm.

Notes

The source notes that the chicken and creamy ranch can be prepared up to two days ahead and stored separately in the refrigerator. Slice the avocado and assemble just before eating. Optional swaps mentioned by the source include chicken thighs, rotisserie chicken, cheddar, pepper jack, cooked rice, black beans, and gluten-free tortillas. The source also notes that the ranch dressing may contain dairy, gluten, and egg depending on the product.
